About Me
Most of you don't know much about me so I figured that I would write a post about who I am and what I am about!
My name is Katie and I am 26 years old, yes I am really only 26! I reside in the GTA in Ontario with my almost 8 3/4 year old son (he likes to be specific).
I am a college student entering my 7th consecutive year of college and am thrilled hat this is my last year! I am currently studying Developmental Services because I have a strong belief that everyone deserves to be treated equally.
I gave birth to my son at the sweet age of 17 and have solely raised him since birth. My son is the reason that I don't give up and push further in every aspect of my life.
I vowed that when I had my son I would still get to achieve the things that teenagers do. I went to prom, graduated high school and have graduated college soon to be 4 times. I was tired of the stereotypes that were placed on young parents and wanted to challenge each one that I encountered..... Guess what?? I overcame them all and I did it without support :)
I am passionate about advocating for those with disabilities, autism, equality, and much more!
I have been through the ringer and have lived to tell the story, my posts are my own and are not meant to upset anyone but for others to relate and maybe learn to tell their stories too. I will also be doing giveaways once I learn more about the blogging world.
I can be found on twitter chatting in parties, scoping out sweet deals at the grocery store or being told off by my son who has an IQ as big as the moon!

Katie's Broccoli Chicken Casserole
I have been asked many times for this recipe, so here it is!! I have changed it around a few times, alse ommitted carrots at times. It is a great, easy recipe that can be followed by all :) Let me know how yours turns out!!
Katie’s Broccoli Chicken Casserole
Feeds 4-6 People
Ingredients
5-6 Boneless Skinless Chicken Breasts Cooked and cubed/cut up
6 cups of broccoli cut up (I use only the crowns)
2 cans of Campbell’s Cream of Broccoli Soup
½ cup milk – used to thin soup mixture
1 Spanish Onion
Garlic Powder
Italian Seasonings
1.5 cups Grated Cheese (I use Sharp Cheddar)
Carrots
Barbecue Sauce (Your Favourite)
Instructions
1. Bake boneless skinless chicken breasts with garlic and Italian seasonings until cooked. (I use M&M Meats Boneless Skinless Chicken Breasts and put them on a baking sheet at 350 for 45 minutes!)
2. While chicken is cooking, steam broccoli and diced carrots for about 10 mins or boil for about 5 minutes. Remove excess water set aside.
3. Dice Spanish onion and add to roasting pan
4. Pour both milk and cream of broccoli soup into roasting pan with onion and mix together
5. Add broccoli and carrots to mixture ensuring everything is covered with the sauce mixture
6. Add cooked chicken to sauce mixture and stir
7. Level out mixture and drizzle with your favourite barbecue sauce (I use something smoky or with hickory)
8. Top with Grated Cheese
9. Bake at 350 for 25-30 minutes (I broil for five minutes after cooking )
